Paid £18 on 3rd April for one month unlimited data sim. Gave notice not to renew as not required.

EE have taken £18 on 3rd May, 3rd June, 3rd July - data sim expired end April. Rang to request refund. They say unable to verify my account saying incorrect last 4 digits of my own bank account 🙄, utter rubbish.

Suggestions please!

That isn't a cancellation; that's just asking how much it'll cost of you did cancel. No wonder you're still being charged. Your need to phone EE to give your 30 days notice of cancellation.

Spoke to a human at ee, not the 'chat'. Yes they made a mistake. A one month only, no contract, is exactly that. They should not have taken further monies and are refunding in full.
