I’ve recently upgraded to unlimited data before my EE bill had come out. It said it was £25 extra in my card and I paid £50 each month for my contract, now why am I currently having to pay out £83??
Like I don’t understand how that’s come up to that.
Is there any overcharge if you use the over amount of your shared data? I’ve been using it for my TV as I have no wifi by me.

Have you been able to check the bill breakdown in your My EE account? It should be under Bills and Payments.
No, your account wouldn't allow you more than the maximum amount of data to share.

Did you upgrade to Unlimited Data Plan by changing your Plan or did you just add the £25 Unlimited Data Monthly Add On Package to your existing Plan, if its the later, you will be paying for your Monthly Plan Cost as normal Plus the extra £25 Add On Cost.
