my wife is with another provider. I want to but an additional sim with my EE account and transfer her existing number to that sim.
Can this be done and if so how, as I presume her line will be under my name rather than hers as it is currently

Yes your wife can transfer her number when you request an additional line.
If she texts PAC to 65075 then she will receive a PAC code which you can input into the form when requesting a new line. Or, you can contact customer services within 30 days of taking out the new line and provide the code to them. The transfer will take 24-48 hours (Mon-Fri).
The new line will be under your name, however she will also be able to register for a My EE account so that she can monitor her usage. You will remain the bill payer and will see both lines on your bill.
