I had an iPhone 13 Pro Max contract with EE. The contract ended but was due for an early upgrade. I then switched to Sim only contract & kept the same sim. I then upgraded to the iPhone 15 Plus I took the sim out & into the new phone. I am now having difficulties with data & also calling. The data doesn’t work or I’ll have to use wifi to make calls

Could you pop the SIM back into the new phone and reset the network settings please? Also, please make sure it's on the latest software.
Tap Settings > General > Transfer or Reset [Device] > Reset > Reset Network Settings

I’ve done that & restarted the network. It’s working now hopefully it stays working. Thank you for your help 🙂
