I have recently started a sim only contract with 3 inclusive extras but can't activate my apple music. I've tried activating through the apple music app but it just says 'no subscription through EE'. I've read on the ee website that ee should have sent a message on how to activate but haven't received anything.

I would suggest speaking to customer service, they should be able to take a look for you.
