Moving to sim only

I'm out of the UK and will be for some time.  I want to move to Sim only on line. I am due an upgrade.  Once I choose a sim only plan; will I have to have a new sim card? When will my current sim be switched off.  Don't want to have my phone switched off until I get the new sim sent to me.

@Huwboyt   You’ll not be sent a new sim as you can continue using your existing Sim.

But EE's Stable Link policy limits your SIM's use of EE's roaming benefits beyond 2 months continuous outta UK.
