Am I automatically on a max plan seems as I’ve had the contract after 2017? Can I use my phone in Australia within my normal usage

@Kerry83 : Look in your MyEE for which plan you are on. You are not auto on a Max Plan just cuz you got the contract after 2017. If you aren't you will need to pay the charges as set out in https://ee.co.uk/help/add-ons-benefits-and-plans/call-or-going-abroad/roaming-costs/countries/austra... .
If you are on contract, remember to text ROAMING to 150 before you leave to check roaming is enabled on your account.
