A chargeable activity also included topping up your phone, or buying a pack.
Are you able to do a top-up?

Ah great! Yes I'm able to top up. If my phone goes into hibernation, does topping up automatically reactivate the sim?

Topping up wouldn't reinstate the SIM, but you've got up to 180 days to contact us to do that.

Ah, then i'm assuming that my sim is in hibernation! Is it possible for me to reinstate without calling as I am in Australia?

I have purchase a roam further add on to use my phone in Canada but on arrival I have received a text from EE saying I will be charged £1.20 for sending a text?

It sounds like you've received the standard text you get when arriving in a non-EU country.
If you have the Roam Further pass, you'll be able to use your allowances in Canada at no extra charge.
You can check it's active in your My EE account.
