Hi, i went into the EE shop yesterday took out a new contract on an iphone xr.
The signal coverage for my home and work place say online its covered but ive got no signal what so ever, how do i get this phone cancelled? I will return to 3 where it was perfect.

Have you checked the Network Status Checker for any known problems?
I would recommend visiting the store in which you took the contract from to discuss the signal coverage further. The manager will then be able to provide you with your options.
