Can you leave your contract without penalty if there is a known issue that can’t be fixed within a certain amount of days, as I know with BT that you can leave your contract without penalty if the issue isn’t fixed within 30 days.

Yes, if the goods or service is faulty then under the Consumer Rights Act 2015 you can.

EE standard opening hours are 8am to 9pm weekday, 8am to 8pm on weekends.
