It appears that there has been an ongoing error on my bill for the last 6 months which I have only just noticed. I hope to launch a serious complaint but wanted to first obtain as much evidence as possible including phone conversations I had with EE customer service people in October 2018. Is there any way of obtaining these?

You will need to make a DSAR request.
