I eventually went to my local EE Store where, after an extensive trial and error elimination it turned out to be a faulty SIM1 tray. When the SIM was inserted into Tray 2 it resolved the issue.

Thanks for coming to the community.
Are you able to try the SIM card in another phone to see if an EE signal shows?
Speak soon.

Does the phone show coverage in other locations?
If yes - strong evidence of a network issue in the affected area. Use "Check service status" on https://ee.co.uk/help/mobile-coverage-checker
If no - good evidence of a phone problem.
