Like Chris said you have answered my question perfectly.
At the moment I don't have further questions. I'll be waiting until the issues some people have with the LTE to clear up as well with any software update Apple will need to do.
But as EE are the only network to currently do the LTE Apple watch, in the future I will defintely be looking for a purchase, so until then thank you for your help.

More and more people are getting connected all of the time.

Yes, it seems to be mainly the people who were trying to activate mobile data on the watch in the first few days who had issues. Mine went straight through without any problems on Tuesday evening in around 5 minutes. No calling EE to give my IMEI and EID - it 'just worked', like it should 🙂
