I've just joined EE and I wanted to know how I can get proof of purchase that is sufficient to insure my new device.

Hi you can contact customer services they'll forward proof of purchase at your email address and if you want them to forward it to insurance company they'll do it.
You can also request that over the live chat option after logging into your account
