Im on 20GB data, unlimited texts and calls, I was wondering if I use 6GB of my data wouldn’t it slow the data speed down like the giffgaff?

EE don't slow your data allowance down at any point.  The only thing that does happen is if you use up all your monthly data allowance, the data then simply stops and EE give you the option to purchase some more data if you want to.
