Is this the recent firmware update? If so, when it finishes a box pops up asking you to confirm with network you're connected to. (EE, Virgin, BT etc). If you accidentally press cancel or the wrong one then you'll have no or the wrong network settings.
Never fear, got to Settings, Connection, Mobile Networks, Access Point Names and then tap the three dots in the top right corner. Finally tap Reset to Default.
You can then select EE and your network settings wilk be reset.
