My ee app thinks I'm still using my previous phone how do I change the name of device?
It will change automatically as you use your device. It's just a graphic and doesn't impact your service.

Welcome to the community,
Make sure that you are not on Wifi when using your phone and then the app should change to your new phone, you can see this when opening the app, as it does not matter and will make no difference to your account and bill.
