actually leave the o2 number switched on as you can still receive calls via that number. Your number should migrate to the EE temporary number. This takes up to 24 hours and should be completed by tomorrow.

I have recently changed provider from O2 to EE.
My number has now been transferred but my phone shows the O2 eSIM.

in Settings > Mobile Services I can see Primary and Mobile Data. Primary is my number but on O2 eSIM, mobile data is on EE temporary number linked to EE eSIM do I have to change this manually?

If you submit a PAC after approx 5.30pm on a Bank Holiday weekend, to quote an extreme example, it won't be submitted until the following Tuesday for port-in on Wednesday. More than "upto 24 hours"!
