My wife and I will be arriving early June for 3 weeks visiting friends and family for 3 weeks. I did some research and I believe EE is considered to have the best network. We plan to get a couple of UK sims for our phones since New Zealand roaming charges would require us to take out a small mortgage.
I am sure it will be daunting trying to organise on arrival as it's a long couple of flights so I prefer to get myself organised in advance. What I'd like is advise on suitable sims where we can possibly share data (100GB plan looked good if it allowed sharing) and have UK numbers for our stay.
We will also be in Ireland for a week visiting family so ideally we'd want the numbers to work there and ideally no rough roaming charges.

@pclewis Your only option is a PAYG sim these will have there own data allowance as you can not share data on PAYG.

make sure your phones are not network locked otherwise you’ll not get any service on the phone. You need to ask your network provider about this.
