Whenever I come home and into the range of my main EE router, my iphone switches to EE.co.uk (EE's backup wifi) and not EE wifi. This can last several minutes or until I go into my phone's settings/wifi, during which time I have no internet service.
why is this, and can I speed up my access?

ee.co.uk is just a domain, not a WiFi connection. Do you mean https://ee-wifi.ee.co.uk/ which is the public widespread EE WiFi network?

Probably as you approach your house you are picking up the router of 1 of your neighbours who is providing it for the EE WiFi network, before you reach range of your own router..
