I have been doing some speed test of the FTTP (FF500) broadband connection, using thinkbroadband.com

The result is not as clean as I had with my previous provider (VM350). What i get is very irregular reading during the test for both Downloads and Uploads.

See results below at the uploads

https://www.thinkbroadband.com/speedtest/1743545079224073255

https://www.thinkbroadband.com/speedtest/1743549946264583855

Is this normal for EE FTTP connections? This is my first time using FTTP

You're getting a nice flat graph for Download which is what you should be aiming for & Upload is not far off. I'd be satisfied with those TBB results.
