I have BT Full Fibre 900 but do not get what I believe should be minimum speeds (only about 600 mbps via WiFi) - is it possible to get your the EE WiFi 7 router to see if this speeds things up?

The BT router is WiFi5 so the max you would normally get is between 500-600Mbps. You should get 900 over ethernet.

I beleive EE 900Mbps customers can get the WiFi7 router for £10/m.

However you can get WiFi6 routers that will give you upto 1800Mbps on a suitable conection, and they do not cost much these days.
