Yes. I have done this personally.

I usually buy my phone outright from Apple, and I then choose a sim only plan, or I stay on my current sim only plan if there isn't one any better than what I'm on.

thanks for the information I was going to pop into a store to see if it was possible but didn't know if the sales people would try getting me into another contract

I believe so but EE don;t encourage it as it's usually a cheaper option as I have recently found out when EE tried to charge me over £10 a month more than it would be to keep my current SIM only contract and buy an iPhone from apple with cashback on my older phone
