What are the extra charges you've incurred? There's some info on the spend cap facility at https://ee.co.uk/help/help-new/billing-usage-and-top-up/track-and-manage-your-usage/how-do-i-set-up-and-manage-spend-cap

Text messages should be fine to send over 160 characters, but iPhones do work differently from Android with these - it can also depend on the content of the message. Are you using iOS or Android?

Your tariff is text/calls/data. MMS are not texts. Texts are only 160 characters, including blank spaces and if that texts goes over 160 characters it could go as an MMS and anything over ( I believe 4 ) to more that one recipient will go as a MMS.
