I’ve used my pac code and my phone will be switching tomorrow but my ee pay date is tomorrow and as I’ve already paid for this month Because I’m a month in advance will the money still leave my account tomorrow even tho I won’t be on ee for December

Yes, your payment for this month will be taken but you will get a final bill with a refund for the time after you leave.

So because I won’t have used their service for not even a day theoretically I would get a full refund right?

Not quite! As your payment date is tomorrow you would have been billed for the following month about 7 days ago giving you about 7 days to pay it. So your refund should be for a full month less about the 7 days you were using it before tomorrow.
