Hi Can I change from a 'No Frills SIM Unlimited' plan to 'Unlimited Essentials' E-sim half way through my contract and without changing my number? Also will I be able to get student discount on the new contract? Thanks

You'll need to speak to EE CS about if they would offer this switch as you still have a remaining contract term and it may need to be settled first.

Give EE a call on 150.

Historically you could increase your contractual monthly amount during your minimum term, but not decrease it.

Whether you have an e-SIM or a p-SIM is immaterial. I doubt you can add any discount code, those are normally applied when a new contract is taken out - but even so, you would still be tied to the "increase but no decrease" rule.
