Why would you want to? The number assigned is more for admin than actual use?

It will use the number assigned to your EE pay monthly SIM and work together with your iPhone.

I appreciate from EE's perspective it is considered an add-on but I want to stop using my phone entirely, since the watch can do everything I need my phone for (more in fact) it seems like the obvious alternative.

Do you know if it's possible?

I'd say no. You still need an iPhone to pair the watch with. That has your main number on it, and you can leave it at home, power it off, etc, and texts and calls will just go to your watch, but you can't just have an Apple Watch cellular plan with no iPhone.

You can definitely have an unpaired plan, obviously an iPhone is still needed to configure the watch but the watch will have a new (separate) number and some carriers will not port a number to a watch's esim.
