@Shinty1980 Just start the new iPhone and bring your old iPhone next to it. See THIS You can put your old sim in the new device. Did you receive a new sim with the new device?

I want to put my old sim into new phone. Will data transfer work if one of the 2 phones doesn’t have a SIM card in it?

Yes, you should move your SIM to the new phone. You can then restore your iCloud backup.
