I've just moved from Sky. EE Broadband active from today. Sky TV package still active due to 31 days notice. When does my EE TV billing start - from now or from when I set up the Pro Box? That is, can I continue to watch Sky until the contract ends as I'm paying for it and then set up the Pro Box or am I paying for EE TV even though the Pro Box is not activated?

You'll start being billed from your agreed service activation date - regardless of whether you set up the TV Box or not.
