Why doesn't EE allow online topup by this convenient method?

@HollowayRoad Because EE already offer different ways to top up see here There are many ways customers would prefer to top up their PAYG accounts and EE can not cater for all of them. They don’t support Apple Pay also.

To add to @Chris_B comments:

Google likely charge for the service.
Unlike banks Google offer no payment protection.
Fraud - as you can use anyone card attached to the google account.

Personally i use it for most of my payments, but you need to understanding the limitations and risks.
