A few months ago we made the switch from Sky Mobile to EE for better mobile coverage. Initially EE was great but the past few weeks the coverage at home (Pagham, West Sussex) has degraded drastically to the point 5G and 4G is unusable for voice calls. We have enabled EE Wi-Fi Calling which doesn’t work particularly well on voice calls. The people at the other end have all reported there is a delay of a few seconds, like a call to America in the 90’s.

Local Facebook posts suggest some work took place on the local masts a few weeks ago and many other EE customers are having the same coverage issue since.

How do we go about getting this resolved?

Firstly WiFi-calling should be as reliable and clear for voice calls as those made over the mobile network, there should be absolutely zero difference between the two. The two caveats are that it's only as good as the underlying WiFi-radio connection, and that the network default is for calls to only be routed over WiFi, if there is insufficient mobile coverage.

If your phone sees a mobile network signal, then unless you have an Android phone and have intentionally set it to "WiFi-preferred", then it won't be using WiFi-calling.

The online network status tool - https://ee.co.uk/help/mobile-coverage-checker - is ideal for this situation. Enter your postcode, and follow "check status". Then either "keep me updated" or "report a problem" depending on the outcome. If there is no recognised service issue in your area, then I would strongly recommend every affected user to use the "report a problem" link - safety in numbers!
