If buying an apple watch would I get a full refund If I return within 14 days due to a change of mind (contract).

Only if you ordered it online or by phone do you have that statutory right. If you ordered in-store you have no such "change-of-mind" right of return.

Hi does the box have to be unopen as I received an Apple Watch but want to return it for a smaller size I’ve already opened it and I’m not sure if I can return it now

Yes, you can still return a device within 14 days if it has been opened.
