Adding Date to your Apple Watch

What is procedure if someone could tell me hot to add data to my Apple Watch SE as bought with cellular and want to add £7.00 to ma Watch data to use. I have turned off WiFi on both Watch and Phone, turned both off and turned on, Unpaired the watch and done again without WiFi but registered again with Wi-fi once connected. The guy on the phone said something to add date go somewhere on EE web site?
