I've ordered a Samsung s21 on the 18th but still update. I understand that it says within 7 days but it has been 8 days today

Yes, it's been saying expected dispatch in 24hours since the 25th

You'll receive a text message from DPD with tracking information as soon as your delivery slot has been confirmed.

Think you'll be waiting a while long I ordered mine on the 13.09 and still not received it and I was told would be here 3 to 5 days
