You can register one with a eSIM, and the other with a physical SIM to use them both in the same phone.

Only EE PAYM or SIMO contracts can be changed to eSIM, not PAYG or business SIMS.

You also will lose 5G at the moment as you can't have dual sim and 5G until Apple provide an update.
