Can't set up 2nd Apple Watch mobile data plan on my account

Hi,

TLDR: My question is, can I have 2 Apple Watch mobile data plans on my account associated respectively to 2 iPhone plans also on my account? If so, how do I go about this with my setup described below?

Last year, I bought an Apple Watch Series 5 for my partner and set up a mobile data plan using my account. Their paired iPhone is using a Sharer Phone SIM plan on my account.

I've now bought an Apple Watch Series 6 for myself and want to set up another mobile data plan to pair with my iPhone using the main SIM 12M Max plan.

When I try to setup this 2nd mobile data plan via the Apple Watch app, I get stuck on the first screen as shown on another post on pairing an Apple Watch,

and can't move forwards to the login screen. The Next button looks like it's being pressed when I tap it, but it doesn't go to the second screen in the link above.

Also, when I open the My EE app on my Apple Watch Series 6, the number shown on the top-left of the app is the mobile number associated with the Apple Watch Series 5 my partner uses.

I have a sneaking suspicion that somehow EE’s systems think my phone is paired with my partner’s Apple Watch, which is why it’s showing the mobile number of my partner’s Apple Watch Series 5 on the My EE app of my Apple Watch Series 6.

I’m wondering whether transferring the mobile data plan from my partner’s Apple Watch Series 5 to my Apple Watch Series 6, and then seeing if I can set up the mobile data for my partner’s Apple Watch Series 5 on a Family Member Plan might sort this out...

I’ve contacted support, who referred me to level 2 support, and I've now been referred to a technical specialist. I was told they'll be in touch in 72 hours.
