once I have chosen my new monthly plan with EE as a new customer can I also choose my phone number to be unique (digits) ?

As @BrendonH said no, but you could think about buying a gold number from eBay or similar sites.

Does that mean that I'm not able to choose my number and that whatever one is 'assigned' once I purchase a phone? In the past I was able to choose from few numbers a staff member presented to me so was lowkey hoping this is still possible. Mind you, that must have been 7/8 years ago now.

Not sure if they still do that in store but it isn't possible online or via phone.
