I have a subscription pack (data + minutes) that I use in the UK. Is it possible to use this in the US as well, or do I have to buy separate day add-ons?

No, packs are not valid outside EU.

Outside the EU, you cannot use your usual UK allowances there but will need to pay the charges or buy roaming add-ons as set out in https://ee.co.uk/help/mobile/roaming/roaming-costs/countries/usa > PAYG.
