what do I need to do to be able to use my payg phone while I'm on holiday in Australia?

I'm unsure about all I've read on your website, a step by step guide would be really helpful.

You don't need to do anything with PAYG as it should work.

No, you don't need to do anything, pay as you accounts are ready to roam.

Texting ROAMING applies only to contracts.

If you wanna use data you need to turn mobile data ON.
