I received this text from EE, saying that the 24 month gaming bundle has come to and end if you want to cancel it text 'stop Xbox'. What exactly is that stopping? Just the xbox Game Pass?

That text command would be to cancel your Game Pass Ultimate subscription if you would no longer like to pay for it via your EE account now your gaming bundle has come to an end.
