You can claim the watch on this claim portal once it opens on 16 January 2023.

The Game Pass ultimate can be added to your Smart Benefits in your My EE account.

Any offers for the S23 I bought the phone with a contract before the launch day I new in EE so I don't know how all this thinks works. Thank you a lot.
