When I change my sim from iPhone 11 to a 12

it uses a months worth of data just by leaving the house

Are you reporting that data usage on an iPhone 12 is different compared with an iPhone 11?

Or that you're finding data usage increases when you, presumably, leave WiFi and rejoin mobile data?

Do you have any apps or system functions that are set to only connect over mobile data?

The iPhone 12 was going to be a replacement so set up from a back up from my iPhone 11 so should be all the same apps and settings I had 10 gig of data when I got in the car then drove for 8 miles then get a message saying I’ve used 80% of my data within the next 5 mins i had used all of my data I normally use 6 gig in a month
