Moving to an area that doesn't have 5G. Will my router still work and just drop down to 4G?

Yes, that's exactly what it does, or even to 3G.

Just did the same, and it works fine on 4G. You also can disable 5G in the router settings, but not really necessary.

As per @XRaySpeX Answer, but just to add, pretty much All good quality 5G LTE Routers are also very high end LTE specked Routers (Normally a good CAT18, 20 or 22 Spec) so with the EE Network you should enjoy a fairly good 4G+, Carrier Aggregation and Multi MiMo Speeds from the EE Network on 4G+.

End of the day the though actual Speeds obtainable will depend on the Routers positioning and Network Coverage Performance at any given location and time of Day.
